Sweet And Sour Shaved Brussels Sprouts Salad

This sweet and sour shaved brussels sprouts salad is a delicious, healthy alternative to a slaw that keeps for days in your refrigerator. Brussels sprouts, almonds, dried cranberries, scallions, and diced gouda cheese are dressed in a honey mustard dressing for a salad that is light, refreshing, and so satisfying as a side or a light lunch.

I like serving this salad as a healthy side dish to a barbecue meal of Oven Barbecued Pulled Pork Sandwiches, Chimichurri Potato Salad, and Rosemary Garlic Gilled Vegetables

Better Than Cole Slaw

Brussels Sprouts are one of those veggies that folks either love or hate. This salad, however, is loved by family members who claim to hate brussels sprouts! It’s that delicious. 

The brussels sprouts, although shaved, remain crunchy and taste fresh and mild. Their slightly bitter and earthy flavor is balanced by the sweetness of the apple and cranberries. 

Unlike cole slaw, the vegetables don’t get soggy in the dressing!

Ingredients Needed

  • Mayonnaise – I used Hellmann’s.
  • Honey
  • Granulated sugar
  • Dijon mustard – I used Maille.
  • Apple cider vinegar
  • Extra virgin olive oil
  • Poppy seeds
  • Fresh brussels sprouts – look for large, firm sprouts.
  • Granny smith apple
  • Pine nuts – you can use pecans, walnuts, or almonds as well.
  • Dried cranberries – I used Ocean Spray unsweetened cranberries.
  • Scallions
  • Gouda cheese – feta, goat cheese, cheddar, or any other cheese you enjoy works in this dish. I like using the gouda, as it gives a hint of smoky flavor.

How To Pick, Store, And Prep Fresh Brussels Sprouts

  • Look for bright green sprouts with tight leaves that are heavy for their size. There should be no black spots or yellow leaves which indicates mold or that the sprouts are old.
  • Smaller brussels sprouts will be sweeter than larger ones. Larger sprouts will have more of a cabbage flavor.
  • Store the brussels sprouts, unwashed, in a zip-top bag. Use them as soon as possible. As brussels sprouts age, they lose their sweetness.
  • To prep, wash the brussels sprouts and remove any loose or yellow leaves. Cut the sprouts in half and cut out the core from the bottom.

Steps To Make This Recipe

  1. Make the dressing by adding all of the ingredients to the bowl of a food processor. Process until emulsified and well combined.
  2. Start assembling the salad by adding the sprouts, apple, pine nuts, cranberries, scallions, and cheese to a salad bowl.
  3. Pour just enough dressing over the salad to moisten the brussels sprouts.
  4. Toss well to coat all the ingredients.
  5. Adjust for seasoning and add more dressing, if desired.

This sweet and sour shaved brussels sprouts salad is a delicious, healthy alternative to a slaw that keeps for days in your refrigerator. Brussels sprouts, almonds, dried cranberries, scallions, and diced gouda cheese are dressed in a honey mustard dressing for a salad that is light, refreshing, and so satisfying as a side or a light lunch.


Ingredients

For the dressing:

  • 1 ⅓ cup mayonnaise
  • 4 tablespoons honey
  • 3 tablespoons sugar
  • 4 tablespoons Dijon mustard
  • 4 tablespoons apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons poppy seeds

For the salad:

  • 1 pound brussels sprouts, cored and thinly shaved
  • 1 Granny Smith apple, unpeeled and grated
  • ⅓ cup pine nuts, toasted
  • ⅓ cup dried cranberries
  • 2 scallions, thinly sliced
  • ⅓ cup diced gouda cheese, cut into ¼-inch chunks

Instructions

Make the dressing.

In the bowl of a food processor or mixing bowl and immersion blender, combine all the dressing ingredients and process until well mixed and emulsified. Set aside.

Make the salad.

Add the sprouts, apple, pine nuts, cranberries, scallions, and cheese to a large salad bowl.

Pour just enough of the dressing over the salad to coat all of the ingredients with the dressing.

Taste to adjust for salt and pepper, and add more dressing as needed to your taste.

Serve immediately or chill until ready to serve.

Store leftover dressing in a jar with a tightly fitting lid in the refrigerator for up to one week.
