This sweet and sour shaved brussels sprouts salad is a delicious, healthy alternative to a slaw that keeps for days in your refrigerator. Brussels sprouts, almonds, dried cranberries, scallions, and diced gouda cheese are dressed in a honey mustard dressing for a salad that is light, refreshing, and so satisfying as a side or a light lunch.

In the bowl of a food processor or mixing bowl and immersion blender, combine all the dressing ingredients and process until well mixed and emulsified. Set aside.
Add the sprouts, apple, pine nuts, cranberries, scallions, and cheese to a large salad bowl.
Pour just enough of the dressing over the salad to coat all of the ingredients with the dressing.
Taste to adjust for salt and pepper, and add more dressing as needed to your taste.
Serve immediately or chill until ready to serve.
Store leftover dressing in a jar with a tightly fitting lid in the refrigerator for up to one week.
