The quintessential Autumn cocktail, this sparkling rosemary pear martini is fruity, sweet, with an herbaceous finish from the rosemary simple syrup. This sophisticated cocktail is perfect for your upcoming Thanksgiving celebrations.
Pear and rosemary go so well together and taste like Fall. And while Florida doesn’t really get chilly until maybe late December, if at all, I still look forward to the less humid, slightly cooler days that Autumn brings. This cocktail is sweet from the pear puree and simple syrup, but not cloying. It has a subtle hint of rosemary and bubbles from the prosecco, which makes the cocktail very smooth. They go down easy but pack a punch with two types of vodka and prosecco.
Sparkling Rosemary Pear Martinis pair so well with a Garlicky White Bean Dip and crudites, spicy and savory Southern Cheese Squares, Glazed Bacon Wrapped Onion Rings and Baked Brie With Honey And Pecans. Imagine serving this spread with the martinis for the most sophisticated holiday cocktail party or game day celebration! Your friends and family will be so impressed.

For the cocktail:
Make the rosemary simple syrup.
In a small saucepan over medium-high heat, stir together the sugar and water. Warm, stirring constantly until the sugar has dissolved and the water is at a simmer. Remove from the heat, add the rosemary and allow it to steep for 30 minutes. Remove the rosemary and allow the mixture to cool completely.
Make the pear puree:
Peel, core, and chop the pear. Add the pear to a blender and top with a splash of lemon juice. Pulse until the pear is smooth. Spoon into a small bowl and set aside.
For the cocktail:
In a cocktail shaker filled with ice, pour in both vodkas, the pear puree, and rosemary syrup. Shake until the outside of the shaker is ice cold.
Strain the mixture into two large martini glasses.
Top with prosecco to taste and garnish with a fresh rosemary sprig.
