Description
The quintessential Autumn cocktail, this sparkling rosemary pear martini is fruity, sweet, with an herbaceous finish from the rosemary simple syrup. This sophisticated cocktail is perfect for your upcoming Thanksgiving celebrations.
Ingredients
For the rosemary simple syrup:
- ½ cup granulated sugar
- ½ cup water
- 4 sprigs fresh rosemary
- 1 strip of lemon zest (about 1-inch wide)
For the pear puree:
- 1 very ripe pear
- Dash of lemon juice
For the cocktail:
- 2 ounces pear vodka
- 2 ounces unflavored vodka
- 4 tablespoons pear puree
- 4 tablespoons rosemary syrup
- ¼ cup prosecco or sparkling wine
- Ice
- Rosemary sprig for garnish
Instructions
Make the rosemary simple syrup.
In a small saucepan over medium-high heat, stir together the sugar and water. Warm, stirring constantly until the sugar has dissolved and the water is at a simmer. Remove from the heat, add the rosemary and allow it to steep for 30 minutes. Remove the rosemary and allow the mixture to cool completely.
Make the pear puree:
Peel, core, and chop the pear. Add the pear to a blender and top with a splash of lemon juice. Pulse until the pear is smooth. Spoon into a small bowl and set aside.
For the cocktail:
In a cocktail shaker filled with ice, pour in both vodkas, the pear puree, and rosemary syrup. Shake until the outside of the shaker is ice cold.
Strain the mixture into two large martini glasses.
Top with prosecco to taste and garnish with a fresh rosemary sprig.
