I love having holiday leftovers, but you can only do so many sandwiches, and just reheating them and trying to duplicate the holiday meal is boring. So every year, I go on a quest to find something a little different to do with the leftovers.
Making leftover stuffing waffles was a brilliant way to use up leftover stuffing. Making them into a waffle gives you all the best parts of stuffing – the crunchy outer crust, the fluffy, moist interior – but just more of it.
Cooking the stuffing in a waffle iron provides more surface area for crunchy bits. The little wells made by the waffle iron provide the perfect crevice for gravy or cranberry sauce.

Ingredients Needed
- Leftover stuffing – Stuffing that has large bits of vegetables or sausage or oysters will not work for this recipe. Traditional bread or cornbread stuffing works best. Also, warm the stuffing slightly so it breaks apart and mixes with the egg easier.
- Eggs – helps bind the stuffing together.
- Chicken or turkey stock – you may or may not need this. If your stuffing seems too dry, just a bit of stock to moisten the mixture will ensure that your waffle will have a custardy, moist interior.
Steps To Make This Recipe
You almost don’t need directions for the recipe, but just in case…
- Preheat a waffle iron and spray with cooking spray.
- Mix together the leftover stuffing and egg.
- If the mixture looks dry, add a bit of stock.
- Spoon half of the mixture onto the preheated waffle iron and spread it out.
- Cook until golden brown and the edges are crispy.
- Serve hot.

Ingredients
4 cups of crumbled leftover stuffing
2 large eggs, room temperature
Chicken or turkey stock, as needed
Instructions
Preheat the waffle iron.
When hot, spray the iron generously with cooking spray.
Meanwhile, in a large bowl, stir together the stuffing and the eggs until well combined.
If the mixture is too thick, add ⅛ cup of stock as needed until the mixture is well moistened, but not loose or soupy.
Spoon half of the stuffing mixture onto the prepared waffle iron. Spread it in an even layer.
Close the lid and allow the waffle to bake until it is golden brown and the edges are crispy.
Transfer the waffle to a plate and repeat with the remaining stuffing mixture.
Serve the waffles as a base for leftover turkey, gravy, or cranberry sauce.
