Leftover Stuffing Waffles


Description

Move over chicken and waffles, Leftover Stuffing Waffles are an easy and delicious way to re-do holiday leftovers. Who doesn’t love anything made into a waffle?


Ingredients

Scale

4 cups of crumbled leftover stuffing

2 large eggs, room temperature

Chicken or turkey stock, as needed


Instructions

Preheat the waffle iron.

When hot, spray the iron generously with cooking spray.

Meanwhile, in a large bowl, stir together the stuffing and the eggs until well combined.

If the mixture is too thick, add ⅛ cup of stock as needed until the mixture is well moistened, but not loose or soupy.

Spoon half of the stuffing mixture onto the prepared waffle iron. Spread it in an even layer. 

Close the lid and allow the waffle to bake until it is golden brown and the edges are crispy.

Transfer the waffle to a plate and repeat with the remaining stuffing mixture.

Serve the waffles as a base for leftover turkey, gravy, or cranberry sauce.
