Crunchy Cornbread Waffles

These crunchy cornbread waffles may be your new obsession with their crunchy outside and fluffy, sweet insides.  They are the perfect compliment to chili, fried chicken, pulled pork, or where ever you might serve cornbread.  Plus, what could be easier than starting with a boxed mix?  

Cooking in a waffle iron seems to be the “new best thing”.  I’ve seen cinnamon rolls made in a waffle iron, cake batter, filled sandwiches using white bread.  I’m sure there are hundreds of other ideas.

It got me thinking about using my favorite cornbread mix.  My only dilemma is to serve it as a side to dip into a steaming bowl of chili or serve the chili on top?  

My mind goes off on tangents of serving options.  A base for fried chicken with hot honey or to cradle a spicy shredded beef that’s topped with a perfect poached egg.  My mouth is watering.  I hope yours is as well!

HOW DO I MAKE CORNBREAD WAFFLES?

This one is almost a no brainer.  Buy yourself a box of Jiffy mix.  Pop it open and mix it with some sugar, an egg, buttermilk, and melted butter. Allow the mixture to sit a moment to thicken and plop that batter onto your hot waffle iron.  In less than five minutes, you have a crispy, beautiful waffle.  Almost nirvana.

ADD-INS FOR THESE CRUNCHY CORNBREAD WAFFLES

  • Go Tex-Mex and add in ½ cup of shredded cheddar cheese, a teaspoon of chili powder,  and diced, jarred jalapenos.
  • Increase the savory note with a handful of shredded Gruyere cheese and some sliced green onions.
  • Want something sweeter?  Try adding a bit of cinnamon, increasing the sugar, and tossing in a few chopped walnuts.
  • How about a crunchy base for something sweet?  Add in some toasted, chopped pecans, 1 teaspoon of butter flavoring, and swapping the granulated sugar for brown sugar.  Then top that masterpiece with vanilla ice cream, caramel, and nuts in syrup.

I like to serve these crunchy cornbread waffles with a steaming bowl of Homestyle Beef Chili or a Grilled Piri Piri Chicken, and a side of Southern Style Coleslaw.  I also like to serve the Crunchy cornbread waffles with a big cup of The Best Cheese Soup or Cuban Black Bean Soup.

CRUNCHY CORNBREAD WAFFLES

These crunchy cornbread waffles are crispy and crunchy on the outside and fluffy on the inside.  The waffles are perfect with anything that you would normally serve cornbread with.

Ingredients

1 box Jiffy corn muffin mix

1 tablespoon granulated sugar

1 egg, lightly beaten

1/2 cup buttermilk

1 tablespoon melted butter

Instructions

Preheat the oven to 250 degrees.  Place a cooling rack over a large baking sheet and place in the oven.

In a large batter bowl, combine all the ingredients.  Mix until just combined.
Pour the batter into the hot waffle iron and cook until the waffle is golden brown and steam is no longer coming off of the iron.

With a fork, carefully remove the waffle from the iron and place it on the wire rack over the baking sheet in the oven to keep warm. Repeat with the remaining batter.

Serve hot.
