Cinco De Mayo Chips And Dips

One of the best things about a Mexican restaurant is the chips, salsa, and queso served with the margaritas.

Why not make it at home?  In about 30 minutes, you can whip up a batch of Chunky Homemade Salsa and Creamy Rotel Queso for a delicious Cinco De Mayo party!  Now you don’t have to feel ashamed for asking for seconds of the salsa or queso.

Serve your salsa, queso, and chips with a bowl of The Best Guacamole, a pitcher of Fresh Citrus Margaritas, or a Pineapple Margarita.

CHUNKY HOMEMADE SALSA

Ingredients

6 large plum tomatoes, seeded and diced into ¼-inch cubes

1 medium sweet onion, finely diced

2 jalapeno peppers, seeded and finely diced

2 large garlic cloves, finely minced

2 tablespoons finely minced fresh cilantro

Juice of 2 fresh limes

1 can (4-ounce) diced green chiles, undrained

2 tablespoons red wine vinegar

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon Kosher salt

Tortilla chips for serving

Instructions

In a large mixing bowl, fold together all of the ingredients until well combined.

Taste for seasoning and add additional salt, lime juice, cumin, or chili powder.

You can serve the salsa right away or for a smoother and more intense flavor, spoon into an airtight container and chill for at least 2 hours before serving.

CREAMY ROTEL QUESO

Ingredients

16 ounces Velveeta cheese, cubed

1 can (10-ounces) Rotel tomatoes, with the juice

1 can (4-ounce) can diced green chiles, undrained

½ block (4-ounces) cream cheese, softened

½ cup sour cream

Instructions

Dump the Velveeta cubes into a large glass microwave safe bowl.  Pour in the Rotel, green chiles, and cream cheese.

Microwave on high for 2 minutes.  Stir and microwave in 1 minute intervals, stirring after each minute until the cheese is melted.

Remove the bowl from the microwave and stir in the sour cream until smooth.

Serve warm.
