What Is Baked Oatmeal?

Baked oatmeal is an easy way to serve your family an oatmeal breakfast that you don’t have to stand and stir. It is a hot breakfast casserole of oats, milk, fruits, and flavorings baked in a casserole dish, producing a bread pudding-like consistency but with way more flavor and texture.

Ingredients Needed

  • Almond butter – this not only adds some protein, but it also adds creaminess and flavor.
  • Applesauce – adds sweetness, flavor, and moisture to the casserole. It is replacing vegetable oil in the recipe.
  • Brown sugar substitute – I like to use Truvia brand, but regular brown sugar, maple syrup, agave syrup, or granulated sugar will work well. Use your favorite. You may have to play with the amounts to suit your tastes.
  • Almond extract and vanilla extract
  • Baking powder – lightens the casserole and helps it to rise.
  • Kosher salt
  • Oat milk or any plant-based milk. You can also use whole or low-fat cow’s milk.
  • Rolled oats – not instant oatmeal.
  • Almonds – I like using sliced, toasted almonds. The sliced almonds give the perfect texture without having too much of a crunch. Toasting them adds even more flavor.
  • Powdered sugar – helps to brown the top of the casserole and the almonds.

Steps To Make This Recipe

  1. Stir the almond butter, apple sauce, sweetener, flavorings, baking powder, and salt.
  2. Whisk in the oat milk
  3. Fold in the rolled oats.
  4. Spoon the mixture into a casserole dish.
  5. Combine the powdered sugar and the almonds.
  6. Spread the almond mixture on top of the oats.
  7. Bake until the liquid has absorbed and the top is light golden brown.

Variations

  • Replace the almond butter with peanut butter and the applesauce with mashed bananas. Omit the almond extract and double the vanilla. Finally, top the baked oatmeal with chopped, toasted walnuts.
  • Toss in 1 cup of fresh raspberries and carob or chocolate chips. Replace the almond extract and increase the vanilla to 2 teaspoons. Omit the nuts and use ¼ cup granulated sugar and ¼ cup chopped freeze-dried raspberries as a topping.
  • Replace the almond butter with cookie butter, stir in 1 teaspoon of cinnamon, omit the almond extract, and increase the vanilla to 2 teaspoons; replace the nuts with ¼ cup of granulated sugar and ½ teaspoon of cinnamon.

Ingredients

½ cup almond butter

¼ cup unsweetened applesauce

¼ cup brown sugar substitute (I used Truvia)

1 teaspoon almond extract

1 teaspoon vanilla extract

½ teaspoon baking powder

½ teaspoon Kosher salt

1 ¾ cups oat milk, unsweetened (or plant-based milk of choice)

2 cups rolled oats

½ cup sliced almonds, toasted

2 tablespoons powdered sugar


Instructions

Preheat the oven to 375 degrees.

Spray a 2-quart casserole dish with cooking spray.

In a large bowl, stir together the almond butter, applesauce, brown sugar substitute, almond extract, vanilla extract, baking powder, and salt until well combined.

Whisk in the oat milk.

Fold in the oatmeal.

Spoon the mixture into the prepared baking dish.

In a small bowl, toss the almonds with the powdered sugar.

Spread the almond mixture over the top of the oatmeal.

Bake for 35 minutes until the liquid is absorbed and the top is slightly golden.
