Almond Baked Oatmeal is a decadent-tasting yet healthy breakfast that will satisfy your sweet tooth while nourishing your body. Top it with some vanilla Greek yogurt and fresh fruit for a filling breakfast that will keep your belly full until lunch.

Ingredients

½ cup almond butter

¼ cup unsweetened applesauce

¼ cup brown sugar substitute (I used Truvia)

1 teaspoon almond extract

1 teaspoon vanilla extract

½ teaspoon baking powder

½ teaspoon Kosher salt

1 ¾ cups oat milk, unsweetened (or plant-based milk of choice)

2 cups rolled oats

½ cup sliced almonds, toasted

2 tablespoons powdered sugar

Instructions

Preheat the oven to 375 degrees.

Spray a 2-quart casserole dish with cooking spray.

In a large bowl, stir together the almond butter, applesauce, brown sugar substitute, almond extract, vanilla extract, baking powder, and salt until well combined.

Whisk in the oat milk.

Fold in the oatmeal.

Spoon the mixture into the prepared baking dish.

In a small bowl, toss the almonds with the powdered sugar.

Spread the almond mixture over the top of the oatmeal.

Bake for 35 minutes until the liquid is absorbed and the top is slightly golden.
