I’m a fan of being indulgent throughout the holidays – starting with Halloween and going straight through New Year’s. To counteract the rich treats, I like to keep the rest of our meals clean, light, and healthy. A smoothie is a great place to start. You can tailor the ingredients to what you have on hand or your family’s tastes. Plus, it’s a quick and easy, portable meal!
Eggnog is typically made with raw egg yolks. The FDA suggests that raw eggs not be consumed due to the risk of salmonella unless you purchase pasteurized eggs, which have been heated just enough to kill the bacteria. There is still a small risk of food born illness.
If you want to eliminate any risk, Egg Beaters Egg Product is a tasty alternative. It uses only egg whites, which don’t usually contain salmonella and it’s pasteurized. On a side note, Egg Beaters are considered a processed food due to the added B vitamins and thickeners like xanthan gum and guar gum.

½ cup Egg Beaters Egg Product or 1 whole large egg and one egg yolk
1 scoop vanilla protein powder
⅓ cup sugar substitute (or to taste)
1 cup milk or milk substitute
1 frozen banana
½ teaspoon vanilla
1 teaspoon rum extract
4–5 ice cubes
Pinch of cinnamon
Pinch of nutmeg
Combine the Egg Beaters, protein powder, sugar substitute, milk, banana, vanilla, rum extract, and ice cubes in a blender or a mason jar with an immersion blender.
Blend until smooth and slightly thickened.
Pour into two glasses.
Sprinkle with cinnamon and nutmeg.
Serve immediately.
