Minty and refreshing, a Classic Mojito is a fun summer rum cocktail that appeals to most people. This recipe makes one cocktail, but there is enough Mojito Syrup to make a pitcher!
When it’s hot outside and I’m feeling a little lazy, I like serving this cocktail with Mexican Shrimp Ceviche, Toasted Israeli Couscous Salad, and Key Lime Pie Popsicles for a meal that is cool, delicious, and EASY!
A mojito is a traditional Cuban cocktail consisting of white rum, sugar or simple syrup, lime juice, club soda, and mint. It’s sweet, citrusy, and minty.
For the mojito simple syrup you will need:

Muddle mint in the bottom of a tall highball glass until it is just bruised and you can smell the mint.
Add the remaining ingredients and fill the glass with ice cubes.
Stir well with a long spoon.
Put your feet up, take a sip, and enjoy.

Mojito Syrup:
1 cup water
1 cup granulated sugar
10 mint leaves
½ lime
For the Mojito:
10 fresh mint leaves
½ lime, cut into 4 wedges
3 tablespoons mojito syrup, or to taste
1 cup ice cubes
1 ½ ounces white rum
½ cup club soda
To make the mojito syrup, add the water, sugar, mint leaves, and half a lime to a small saucepan. Bring to a boil and allow to boil for about 1 minute, stirring constantly to ensure that the sugar has dissolved completely. Set aside to cool completely.
The syrup can be stored in the refrigerator for up to 2 weeks.
For the cocktail:
In a large cocktail glass, place the mint leaves and a lime wedge. Use a muddler to bruise the mint and incorporate it with the lime to release the mint oils and the lime juice.
Add two more lime wedges and muddle again to release their juice.
Pour in the simple syrup.
Fill the glass ⅔ full with ice.
Pour the rum over the ice and top off the glass with the club soda.
Stir and taste for sweetness.
