A classic mojito cocktail is a refreshing and sweet rum drink that is perfect for sipping on a hot summer’s day.
Mojito Syrup:
1 cup water
1 cup granulated sugar
10 mint leaves
½ lime
For the Mojito:
10 fresh mint leaves
½ lime, cut into 4 wedges
3 tablespoons mojito syrup, or to taste
1 cup ice cubes
1 ½ ounces white rum
½ cup club soda
To make the mojito syrup, add the water, sugar, mint leaves, and half a lime to a small saucepan. Bring to a boil and allow to boil for about 1 minute, stirring constantly to ensure that the sugar has dissolved completely. Set aside to cool completely.
The syrup can be stored in the refrigerator for up to 2 weeks.
For the cocktail:
In a large cocktail glass, place the mint leaves and a lime wedge. Use a muddler to bruise the mint and incorporate it with the lime to release the mint oils and the lime juice.
Add two more lime wedges and muddle again to release their juice.
Pour in the simple syrup.
Fill the glass ⅔ full with ice.
Pour the rum over the ice and top off the glass with the club soda.
Stir and taste for sweetness.
