Easy Buffalo Chicken Salad

This easy buffalo chicken salad is a spicy and tangy twist on a deli classic.  Chicken is mixed with all the flavors of buffalo chicken wings.  It’s superb on crackers, as a stuffing for celery or cucumber slices, as a filling for a pita or a sandwich.

HOW DO I MAKE THIS RECIPE

The best part of this recipe is the texture of the chicken.  Poaching the chicken tenders in chicken stock and then shredding them keeps the chicken tender and juicy.  Also, using the mixer to shred the meat is ridiculously easy.

Next, take that yummy chicken and mix it with mayonnaise, sour cream, hot sauce, celery, and…the secret ingredient:  dry ranch seasoning.  It makes an enormous difference in the taste.  

VARIATIONS

  • For a thicker salad, replace the mayonnaise with an equal amount of cream cheese.
  • For more heat, try Sriracha sauce or add a bit of cayenne pepper
  • Crisp bacon and shredded cheddar makes it more savory
  • Add crumbled blue cheese for even more of a ‘chicken wing’ flavor

EASY BUFFALO CHICKEN SALAD

Ingredients

1 ½ pounds chicken tenders

32 ounce box low sodium chicken stock

1/2 cup mayonnaise

5 Tablespoons sour cream

5 Tablespoons Frank’s Buffalo Wing Sauce

3 teaspoons dry ranch seasoning

1 cup chopped celery

Instructions

Place the chicken tenders in a small Dutch oven.  Pour the chicken stock over the tenders. Cover the pot and poach over medium heat for 15-25 minutes or until the chicken is fully cooked.  Don’t allow the pot to come to a boil.

When the chicken is cooked through, remove the tenders with a slotted spoon and place them into the bowl of an electric mixer.

 Shred the chicken using the mixer at medium speed.  Add the remaining ingredients and mix well.

Spoon into a container with a tight-fitting lid and chill until ready to use.
