HOW DO YOU MAKE DECADENT CINNAMON ROLL PANCAKES?
If you can make pancakes, then you can make this recipe. It’s really only the one additional step of adding the cinnamon swirl. Trust me, these decadent cinnamon roll pancakes are worth the extra effort.
TIPS FOR MAKING THIS RECIPE
- Don’t overmix the pancake batter. Just like bread or anything with gluten, you only want to mix it till it’s just combined. If it has lumps, that’s okay – they’ll dissolve while cooking.
- Use an ice cream scoop to get a perfect amount of pancake batter every time.
- Allow the sugar-cinnamon mixture to cool off and thicken a little. This will help to keep the pretty swirl pattern intact and not just melt into the pancake. (But if that happens, it will still taste amazing.)
- Speaking of the cinnamon swirl, start the swirl in the middle of the pancake and don’t go too close to the edge or the swirl will melt off of the side of the pancake. Again, it will still taste great, it just won’t be as pretty.
- Wait until the pancake forms bubbles on the top before swirling in the cinnamon-sugar so it doesn’t melt into the pancake.
- Wipe out the pan between making the pancakes. You don’t want any leftover cinnamon sugar to scorch on the bottom and affect the flavor of the next pancake.

DECADENT CINNAMON ROLL PANCAKES

Ingredients
For The Cinnamon Swirl:
For The Cream Cheese Glaze:
- 4 tablespoons butter, room temperature
- 2 ounces cream cheese, room temperature
- ¾ cup powdered sugar
- ½ teaspoon vanilla
For The Pancake Batter:
- 1 cup flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup buttermilk
- 1 large egg, lightly beaten
- 1 tablespoon vegetable oil
Instructions
Make the cinnamon swirl.
In a medium bowl, combine the butter, brown sugar, cinnamon, and vanilla. Spoon the filling into a medium zip-top baggie. Set aside.
For the glaze, melt the butter in a small saucepan over low heat. Remove from the heat and stir in the cream cheese until it is fully incorporated.
Whisk in the powdered sugar and vanilla until smooth. Set aside.
To make the pancakes, heat a large nonstick skillet over medium-low heat. Spray it with nonstick spray.
Use an ice cream scoop to add the batter to the pan. Use the back of a spoon to spread the batter into a circle.
Next, grab the bag of cinnamon swirl. Cut the corner off one end of the bag.
When the pancake begins to form small bubbles on the top, squeeze the cinnamon swirl in a circular pattern on the pancake.
Cook the pancake for 3 – 4 minutes, then carefully flip the pancake. Cook for another 3 minutes.
Use a spatula to flip the pancake onto a plate. It should be cinnamon swirl side up.
Repeat the process with the remaining batter. You can keep the pancakes warm in a 200 degree oven.
When ready to serve, stir the glaze till liquidy. If necessary, you can reheat it on low in the microwave.
Drizzle the pancakes with the glaze.
Serve hot.
