Our favorite Christmas dinner is serving the sauteed green peas alongside Roasted Beef Tenderloin, Creamy Scalloped Potatoes, and a bright red and green Panzanella Salad.  It’s a simple, yet elegant meal that’s delicious and won’t take all day to prepare.

Ingredients Needed

  • Butter – I used salted butter, but if you have sweet or unsalted butter, increase the salt to taste.
  • Olive oil – this helps raise the smoke point of the butter.  
  • Shallots – milder in flavor than onions.  If onions are what you have, be sure to mince them as fine as possible and soak them in ice water for 20 minutes and drain well before sauteeing.  This will help remove some of the ‘onion bite’ flavor.
  • Garlic
  • Petite green peas – fresh is wonderful if you can find them.  If not use frozen, but thaw them first.
  • Salt and pepper

Steps To Make This Recipe

  1.  Melt butter and olive oil in a skillet and saute the shallots and garlic.
  2. Toss in the peas, salt, and pepper and cook until the peas are tender.
  3. Spoon the peas into a serving bowl.

Sauteed Green Peas


Description

With a few simple ingredients and about 30 minutes, you can whip up an elegant and delicious holiday side dish that your family will love.


Ingredients

2 tablespoons butter

1 tablespoon olive oil

5 large shallots, finely minced

2 large garlic cloves, minced

4 cups petite green peas

1 teaspoon salt

1 teaspoon ground black pepper


Instructions

In a large skillet over medium heat, melt the butter and olive oil together.  Add the shallots and saute until softened and lightly caramelized – about 7-10 minutes. 

Add the garlic and cook for another 2 minutes.

Toss in the peas, salt, and pepper.  Stir to coat the peas completely with butter and olive oil.

Cook for 5-7 minutes or until the peas are bright green and tender, but not mushy.

Remove from the heat, stir the peas one more time, and spoon into a serving bowl.
