WHAT IS MISO?
Miso is a fermented soybean paste that is used as a condiment. It is either reddish or brown in color or very pale. The flavor is very salty and tangy. A little bit goes a long way.
Shiro or sweet miso, also called white miso, is made with both soybeans and white rice. It’s also fermented for a shorter time, producing a more delicate flavor, less salty and very mild. This is my personal favorite.
HOW DO I MAKE THIS ROASTED VEGETABLE DISH?
The trick to perfect Maple Miso Glazed Brussels Sprouts is getting them tender and creamy on the inside with a perfectly caramelized, slightly crispy outside. The secret is placing them on the baking sheet just so.
Once you’ve trimmed the sprouts, sliced them in half, and coated in the sweet, savory glaze, it is imperative to place the cut side of each sprout onto the baking sheet. You want as much surface area on the sheet as possible, so don’t overcrowd the pan and keep them in a single layer.
Next, you want to roast them in a hot oven to caramelize the outside and get the inside creamy and tender.
Give them a quick toss and return them to the oven for a few minutes.

A delicious roasted vegetable recipe for brussels sprouts glazed in maple syrup and miso. This sweet and svory dish is perfect for a holiday table, but easy enough for a weeknight dinner.
1 ½ pounds brussels sprouts, trimmed and sliced in half lengthwise
6 tablespoons olive oil
2 tablespoons Dijon mustard
2 tablespoons Sweet Miso
2 tablespoons maple syrup
4 teaspoons balsamic vinegar
Kosher salt and pepper to taste
Preheat the oven to 400 degrees.
In a small bowl, whisk together the olive oil, mustard, miso, maple syrup, and the balsamic vinegar.
On a large, rimmed baking sheet, toss the brussels sprouts with the dressing. Toss until well coated. Arrange the brussels sprouts in a single layer, with the cut side down.
Roast in the preheated oven for 15 minutes.
Remove the pan from the oven. Sprinkle lightly with salt and pepper. Toss using a spatula and return the baking sheet to the oven. Continue to roast for another 5 to 10 minutes until the sprouts are tender and beginning to caramelize on the edges.
