Cranberry Goat Cheese Flatbread is an appetizer that is as easy to make as it is impressive to serve. Ready in less than 30 minutes, this delicious starter is a beautiful and elegant start to your Thanksgiving meal.
I like to start serving Thanksgiving appetizers before lunchtime so my family can graze throughout the day while watching football. Our favorite appetizers include Prosciutto, Pear, and Blue Cheese Appetizer Bites, Garlicky White bean Dip, Southern Cheese Squares, Game Day Reuben Dip, and Baked Brie With Honey And Pecans.
What Is Flatbread?
Flatbread is a fairly new food trend that has its roots in ancient Egypt. Flatbread is just that, flat bread. It’s unleavened. There are many different types of flatbread from many different regions – naan from India, lavash from Israel, tortillas from Mexico, and piadina from Italy.
Ingredients Needed
- Flatbread – I used Stonefire Artisan Flatbread.
- Olive oil – for brushing on the flatbreads.
- Whole cranberry sauce – store-bought is perfectly fine, but for even better flavor, try making our Homemade Cranberry Sauce or for a spicy kick try making Fresh Cranberry Salsa with jalapenos.
- Goat cheese – Use a log of goat cheese, rather than the crumbled. The logs are creamier. I used plain, but you could also use garlic and herb or honey flavored.
- Fresh rosemary – both for flavor and as a garnish.
Instructions For Making This Recipe
- Brush the flatbread with olive oil.
- Spoon the cranberry sauce over the flatbread.
- Sprinkle with goat cheese and minced rosemary.
- Bake until golden.
- Slice the flatbread and garnish it with a sprig of rosemary.
Variations
- Add orange juice and fresh orange zest to the cranberry sauce.
- Stir some of the gelled cranberry sauce into the goat cheese and spread it on the flatbread before spooning the cranberries from the sauce on top.
- Make it more savory by using herbed goat cheese and sprinkling the top with basil or thyme.
- Fruity goat cheese or honey goat cheese make the appetizer sweeter. You can spread the flatbread with a fruit preserve before topping with cranberry sauce and sprinkling a fruit goat cheese on top.
- A sprinkle of chopped pecans, walnuts, or pistachios.

Ingredients
4 prepared flatbreads (I used Stonefire Artisan Flatbread)
4 teaspoons olive oil
1 cup whole berry cranberry sauce
1 log (8-ounces) goat cheese
1 teaspoon finely minced rosemary
Fresh rosemary sprigs, for garnish
Instructions
Preheat the oven to 350 degrees.
Place the flatbread on a baking sheet and brush each flatbread with 1 teaspoon of olive oil.
Spoon some of the gel from the cranberry sauce onto each flatbread and spread it around, leaving at least a ½-inch border around the flatbread.
Top with the whole cranberries.
Crumble 2-ounces of goat cheese over each flatbread and sprinkle with ¼ teaspoon finely minced rosemary.
Bake in the preheated oven for 5-7 minutes or until the flatbread is golden around the edges and the goat cheese has softened.
Slice and garnish with a fresh rosemary sprig.
Serve warm.
