Sloppy Joe biscuit cups are an easy and fun way to give a new twist to a sloppy joe. And what kid (including me) doesn’t love getting a little biscuit cup of their very own.
Meal boredom is real…and frustrating. Making dinner and then watching your family turn their nose up, roll their eyes, or sigh as they look at their plate is defeating. It isn’t easy coming up with new and exciting meals that they will ACTUALLY eat is a challenge.
But reinventing their favorites in a fun way makes those tired, ordinary foods interesting and exciting once more.
Tangy ground beef stuffed into a biscuit cup and topped with cheese. What’s not to like?
Serve the biscuit cups with Southern Style Cole Slaw, a few Cheesy Baked Zucchini Fries, and a Salted Peanut Butter Cookie for a meal that will excite your whole family.
My last tip: If you’re short on time or have a can of sloppy joe sauce in your pantry there’s nothing wrong with using it and saving a few minutes. It’ll still be delicious. Hide the can in the trash and nobody needs to know.

Spray a muffin pan with cooking spray and set it aside.
Preheat the oven to 400 degrees.
Make the sloppy joe meat.
In a large skillet over medium-high heat, melt the butter and olive oil together.
Add the beef and cook, breaking apart into fine crumbles as it cooks – about 5 minutes.
Spoon into a fine mesh colander to drain.
Add the onions, bell pepper, and garlic to the skillet. Cook, stirring often, until soft – about 3 minutes.
Add the beef back to the pan and stir to combine with the vegetables.
Stir in the tomato paste, ketchup, broth, brown sugar, mustard, chili powder, Worcestershire sauce, salt, and black pepper. Stir well.
Reduce the heat to medium-low and cook for 15 minutes, stirring often, until you reach the desired thickness. Remove from the heat and set aside.
Separate the biscuit dough into 10 biscuits.
Flatten each biscuit into a 5-inch circle. Press the dough into the bottom and up the side of the prepared muffin tin.
Fill the center of each muffin with the beef mixture.
Bake in the preheated oven until the biscuits are golden brown – about 10 minutes.
Sprinkle each muffin with the diced cheese cubes.
Return to the oven for 2 minutes longer or until the cheese is melted.
Serve warm.
