Nothing screams Halloween more than a platter of small cheese balls adorably made into little bats! Whipping together three types of cheese with sour cream, bacon, and flavorings makes for a tasty bite that pops with flavor. These can be made ahead of time and decorated just before serving.
Ingredients Needed
- Cream cheese – use a good quality cream cheese. This cheese provides structure for the balls.
- Goat cheese – adds a tangy note. I used plain, but flavored goat cheeses, such as garlic & herb would be delicious.
- Cheddar cheese – please grate your own for the best tasting, creamiest ceese bite. Pre-grated cheeses have a gritty, grainy coating that ruins the creaminess of the Batty Cheese Bites.
- Sour cream – you could also use Greek yogurt.
- Garlic powder and onion powder – for flavor.
- Bacon – like using a tin bacon to get it as crispy as possible before crumbling it into bits.
- Pistachios – you can use either salted or unsalted. I like using salted nuts.
- Blue tortilla chips – used to make the ears and wings.
- Black olives – used to make the batty eyes.

Hints And Tips
- Use quality cheeses and always, always grate your own! The cheeses in this recipe are the stars of the show. Using a cheese that’s past its prime or of lower quality will affect the final taste of the cheese bites.
- Be sure to use very crispy bacon. The bacon bits will add not only flavor, but a lovely texture to the cheese bites. Flabby bits of bacon ruin the texture and lend an unappetizing texture and burned bacon will add an unwanted acrid taste. Never good.
- Be sure your garlic and onion powder is fresh. Smell it. It should have a strong aroma, not be caked together. Taste a bit on your finger tip. It should taste like an onion or garlic.
- You can make the balls ahead of time. Place the pistachio coated balls on a baking sheet, wrap in plastic wrap and freeze until hardened. Once frozen store the balls in a container with a tightly fitting lid. When ready to use, allow the balls to come to room temperature. Decorate and serve.
- Leftover Batty Cheese Bites can be stored in a tightly covered container in the refrigerator for up to 5 days or frozen for up to 3 months.

Ingredients
1 block (8 ounces) cream cheese, room temperature
5 ounces goat cheese, room temperature, divided
1 cup shredded sharp cheddar cheese
3 tablespoons sour cream
2 teaspoons garlic powder
1 teaspoon onion powder
¼ cup very finely chopped crispy bacon
1 cup finely chopped pistachios
Instructions
In the large bowl of an electric mixer or hand mixer, combine the cream cheese, 4 ounces of the goat cheese, cheddar, sour cream, garlic powder, onion powder, and bacon bits. Mix on high speed until well combined. Cover and chill for 20 minutes.
Place the chopped pistachios onto a flat plate. Set aside.
Remove the mixture from the refrigerator. Use a tablespoon-sized cookie scoop to portion the cheese. Roll each portion into a ball, then roll the ball in the pistachios until it is completely covered.
Place the pistachio-coated ball onto a serving platter. Insert two blue tortilla chips on the side as wings. Break the corners off of another tortilla chip and add to the top of the cheeseball as ‘ears’.
Using a tiny smear of the reserved goat cheese, ‘glue’ two sliced black olives onto the cheese ball as eyes.
Use a toothpick to add a bit of the goat cheese to the center of the olives to make ‘pupils’.
Serve at room temperature.
