2 tablespoons butter
1 tablespoon olive oil
5 large shallots, finely minced
2 large garlic cloves, minced
4 cups petite green peas
1 teaspoon salt
1 teaspoon ground black pepper
In a large skillet over medium heat, melt the butter and olive oil together. Add the shallots and saute until softened and lightly caramelized – about 7-10 minutes.
Add the garlic and cook for another 2 minutes.
Toss in the peas, salt, and pepper. Stir to coat the peas completely with butter and olive oil.
Cook for 5-7 minutes or until the peas are bright green and tender, but not mushy.
Remove from the heat, stir the peas one more time, and spoon into a serving bowl.
