Start Halloween celebrations at home with a batch of gooey, chocolatey melted monster cookies! They start with a boxed cake mix and are ready in about 30 minutes. The kids will love them.
1 (15.25-ounces) box of chocolate cake mix (I used Betty Crocker Super Moist Devil’s Food)
2 large eggs
½ cup vegetable oil
1 teaspoon vanilla
⅛ teaspoon instant coffee powder (optional)
⅔ cup mini M&M’s
24 candy eyes
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a silicone mat. Set aside.
In a large bowl, use a wooden spoon or spatula to stir together the cake mix, eggs, oil, vanilla, and coffee powder.
Fold in the mini M&M’s.
Use heaping tablespoons of the cookie dough and drop them onto the prepared baking sheet. Press 4 – 6 regular size M&M’s into the dough.
Bake for 12-15 minutes or until the tops of the cookies look dry. The cookies should be ‘fudgy’ in the center.
While hot, press 2 candy eyes into each of the cookies.
Transfer the cookies to a wire rack to cool completely.
Store the cookies in an airtight container for up to 1 week.
