½ cup butter, room temperature
⅔ cup sugar
⅓ cup light brown sugar
1 large egg, room temperature
1 teaspoon vanilla
½ teaspoon lime extract
2 teaspoons key lime juice
1 ½ teaspoon finely grated lime zest
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¾ cup white chocolate chips
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a Silpat mat. Set aside.
In a bowl of an electric mixer, cream together the butter and sugar until light and fluffy.
Add the egg, vanilla, lime extract, lime juice, and lime zest. Mix to combine.
