Okay, I’ll be the one to say it. Working at home, kids at home, no getting out for those brief times that are just for you (like hair, nail appointments, going to the gym) is hard, challenging, and exhausting.
We’re told that this is a special time to reconnect as a family, slow down, and enjoy these moments. It’s a beautiful sentiment and I think most of us feel that way to a point.
But, when you spend the whole day caring for your family, being teacher, coach, dance/sports instructor on top of trying to work, keep the house pristine, and worrying about finances, uncertainty, etc., you need to take a moment and nurture YOU – even if it’s just for 10 blissful moments.
That’s where this ridiculously simple and delicious mug cake comes in! You can literally make this for yourself while the kids are outside for the ten minutes before their attention span shifts to the next activity. And it’s probably better than drinking at 10 am.

This recipe is for tht moment when you just want a little something sweet. A mug cake full of peanut butter and chocolate. Did I mention that it’s gluten free AND ready in less than 5 minutes? You’re welcomed.
1 large egg, room temperature
3 tablespoons creamy peanut butter
¼ teaspoon baking powder
1 tablespoon +1 teaspoon brown sugar
1 ½ tablespoons mini chocolate chips
1 tablespoon water
In a small bowl, stir together the egg, peanut butter, baking powder, and sugar until fully combined.
Stir in 1 tablespoon of the chocolate chips.
Spray the inside of a large microwave-safe mug with cooking spray.
Spoon the batter into the mug. Pour the water on top of the batter.
Microwave on high for 1 minute. Sprinkle the remaining 1 teaspoon chocolate chips over the top of the cake.
Cool slightly before eating.
