5 slices bacon, diced
1 large onion, diced
1 large red bell pepper, diced
4 large garlic cloves, minced
4 (16-ounce) cans pork and beans (I like Bush’s brand)
1 cup bourbon
¼ cup ketchup
¼ cup molasses
¼ cup dark brown sugar
¼ cup apple cider vinegar
2 teaspoons yellow mustard
2 tablespoons Worcestershire sauce
Preheat the oven to 325 degrees.
In a Dutch oven over medium heat, cook the bacon until it starts to brown. Add the onion, red bell pepper, and garlic. Cook, stirring often, until the onion begins to turn translucent.
Pour in the four cans of pork and beans, bourbon, ketchup, molasses, brown sugar, vinegar, yellow mustard, and Worcestershire sauce. Stir well to combine.
Cover the Dutch oven and place in the preheated oven. Bake for 1 ½ – 2 hours, until the sauce, is thickened.
Remove from the oven and allow it to sit for 10 minutes.
Serve hot.
