SPINACH SALAD WITH BACON DRESSING

Bowl of fresh spinach salad with sliced hard boiled egg, thinly sliced red onion, crispy bacon crumbles and a sweet and sour bacon dressing. This is a simple salad recipe.

This simple salad recipe is a perfect dinner salad that is a complete meal.  Iron rich spinach, hard boiled eggs, red onion, and crispy bacon are dressed in a sweet and sour dressing.  It’s so satisfying and tasty, your whole family will love it.

Ingredients

For salad:

1 (10-ounce) package fresh baby spinach

4 hard-boiled eggs

8 slices bacon, cooked very crisp

1 small red onion, sliced very thin

¼ package Pepperidge Farm stuffing mix (optional)

For dressing:

⅓ cup sugar

3 tablespoons warm (liquid) bacon fat

¾ cup vegetable oil

⅓ cup red wine vinegar

⅓ cup Dijon mustard

½ teaspoon salt

¼ teaspoon freshly ground black pepper

1 small onion, grated

1 teaspoon celery seed

Instructions

Tear the leaves of spinach and place in large individual salad bowls.  

Slice 1  hard-boiled egg onto each bowl.

Crumble 2 pieces of bacon onto each bowl and top with ¼ of the red onion for each bowl.

Make the dressing.

In a large measuring cup or mason jar, combine all of the ingredients and whisk or cover the jar and shake until fully combined.

Serve the salads with the dressing on the side or pour some of the dressing over each salad bowl and toss completely.
