PRIDE JELLO SALAD

Description

This Pride Jello Salad is a beautiful, cool, creamy, retro dessert that is perfect to celebrate Pride month, children’s parties, or a summer barbecue.


Ingredients

Scale

6 (3-ounce) packages of Jello (I used Cherry, Orange, lemon, Lime, Grape, and Blue Raspberry)

Gel food coloring (optional, but you may need red, orange, yellow, green, blue, and purple)

5 packages of unflavored gelatin 

1 ½ (14 ounce) cans sweetened condensed milk

1 teaspoon almond extract, divided

8 ½ cups water


Instructions

Begin making the layers of gelatin.

The bottom layer is purple.  Dissolve the grape jello with 1 teaspoon of unflavored gelatin, and a drop of purple food coloring into 1 cup of boiling water.  Stir well until completely dissolved.

Pour into a 9×13-inch pan.

Place in the refrigerator so that it is completely flat and chill for at least 30 minutes or until completely set.

Meanwhile, make the white layer.  In a measuring cup, stir 2 teaspoons of unflavored gelatin into 1 cup of boiling water until completely dissolved.  

Stir in ½ can of sweetened condensed milk and about ⅛ teaspoon of almond extract. Stir until well combined.

Set aside to cool until the purple layer is completely set.

When the purple layer is set, pour ¾ cup of the white mixture over the purple layer. Return to the refrigerator until set – another 20 minutes

While this layer sets, make the blue raspberry layer. Dissolve the blue raspberry jello with 1 teaspoon of unflavored gelatin into 1 cup of boiling water.  Set aside to cool while the white layer sets, then pour the colored jello over the white layer.

Continue to make the layers, following the previous steps with a white layer in between.  

You will need to mix up the white gelatin a couple of times. If the white gelatin gets too stiff, sit the bowl into another bowl of hot water to keep it liquid.

Return the pan to the refrigerator after each layer.

After the jello is completely set, use a smooth knife to cut 1-inch squares.  Use a small spatula to remove the squares from the pan and serve in a pretty bowl with whipped cream as a dipping garnish, if desired.
