Healthy Strawberry Granita

Description

Healthy strawberry granita is an easy, sweet, and refreshing dessert that will satisfy your sweet tooth without a lot of calories. Refined sugar and dairy free, this dessert uses fresh berries, lime juice, and just a touch of balsamic vinegar.


Ingredients

Scale

1 cup water

10 packets of Truvia sweetener (or sweetener of your choice)

1 bag (16 ounce) frozen strawberries or 2 pounds of fresh berries, hulled and halved

2 tablespoons fresh lime juice

¼ teaspoon balsamic vinegar (optional, but delicious)

Pinch of salt


Instructions

Stir the sweetener into the water until completely dissolved.

Place the berries into a blender.

Pour in the Truvia water,lime juice, vinegar, and salt.

Blend until smooth – about 1 minute.

Pour the mixture into a 9×13-inch baking pan.

Cover with plastic wrap and place in the freezer.

After 45 minutes the mixture will be frozen around the edges, but slushy in the center. 

Use a fork to scrape theicy edges towards the center of the pan.

Return the pan to the freezer and repeat the scraping procedure every 60 minutes.

Scrap and fluff the ice crystals to prevent large ice chunks from forming.

The consistency should be like Italian ice, look dry, with fluffy crystals.
