This is a fun St. Patrick’s Day libation that tastes like you’re on a tropical vacation. Melon liqueur and rum are mixed with fresh juice and a touch of coconut cream for a sweet, creamy Green-Eyed Leprechaun cocktail that will surely bring good luck.
1 ounce Midori melon liqueur
2 ounces white rum
1 ounce coconut cream
1 ounce fresh lime juice
1 ounce pineapple juice
3–4 frozen pineapple chunks
¼ teaspoon ground cinnamon
Fresh pineapple wedge
Maraschino cherry
Pour the Midori liqueur into the bottom of a hurricane glass. Set aside.
Combine the rum, coconut cream, lime juice, pineapple juice, and pineapple chunks in a blender or smoothie cup with an immersion blender.
Blend until smooth and frothy.
Slowly pour this mixture over the Midori liqueur, but do NOT stir. You want the creamy mixture layered over the green liqueur.
Dust the top with ground cinnamon.
Skewer a pineapple wedge and maraschino cherry and place in the drink as a garnish.
