Description
Garlic chive mashed cauliflower is a lower-carb substitute for mashed potatoes. It’s full of flavor, creamy, and satisfying, and a lot healthier.
Ingredients
4 cups cauliflower florets (about a medium head)
2 ounces cream cheese, softened
2 tablespoons butter, room temperature
2 large garlic cloves, peeled and finely minced
¼ cup grated Parmesan cheese
1 teaspoon Kosher salt
½ teaspoon black pepper
2 tablespoons sour cream
1 tablespoon minced fresh chives
Instructions
Bring a large pot or Dutch oven of water to a boil over high heat.
Add the cauliflower florets to the water and cook for 10 minutes or until it is fork-tender.
Drain the cauliflower well and then turn it out onto paper towels to dry completely.
In the same pot, add the cream cheese, butter, and garlic. Saute the garlic until very fragrant, softened, but not browned.
In the bowl of a food processor, combine the cauliflower, cream cheese, and garlic mixture, Parmesan cheese, salt, and pepper.
Pulse until the mixture is smooth and fluffy.
Spoon the mixture into a serving bowl.
Stir in the sour cream and sprinkle the top of the cauliflower with chives.
Serve immediately.
