FRUIT AND NUT GRANOLA

Sweet, crunchy, and healthy, this fruit and nut granola is a great way to start the day.  Eat it as a cereal with milk, layered with yogurt and fruit as a parfait, or by the handful as a snack.

Ingredients

3 cups rolled oats

1 cup roughly chopped pecans

½ cup slivered or sliced almonds

½ cup sunflower kernels

½ cup coconut oil

¼ cup pure maple syrup (not pancake syrup)

¼ cup honey

½ teaspoon sea salt

½ teaspoon ground cinnamon

1 teaspoon vanilla

½ cup chopped dates

1 cup currants

Instructions

Preheat the oven to 300 degrees.  Line a baking sheet with parchment paper or a Silpat mat.  Set aside.

In a large mixing bowl, stir together the oats, pecans, and sunflower kernels, until well incorporated.

In a medium bowl, mix the coconut oil, maple syrup, honey, sea salt, cinnamon, and vanilla together and pour over the oats mixture.

Use a spatula to fold the oat mixture and the wet ingredients together until all of the oats, nuts, and fruit are moistened.

Spread the mixture evenly onto the prepared baking pan.

Bake in the preheated oven for 15 minutes.  Carefully toss the ingredients on the baking sheet and return to the oven to bake for another 15 minutes until the oats are golden and the nuts have lightly toasted. Remove the pan from the oven and sprinkle the dates and currants over the top.  Use a spatula to lightly toss the hot granola with the fruit.

Cool completely.  Use a spatula again to break up the granola into pieces.

Store in an airtight container.
