Curried Couscous with jeweled fruit - couscous spiced with curry powder, sauteed onions, garlic, raisins, and fresh pomegranate seeds.

CURRIED COUSCOUS WITH JEWELED FRUIT


Description

This curried couscous with jeweled fruit is an easy side dish that is not only delicious and healthy, but it’s also beautiful to look at with the orange hue from the curry, the dark raisins, and bright red pomegranate seeds.  It’s an unexpected addition to your Holiday meals.


Ingredients

Scale

1 tablespoon butter

1 tablespoon olive oil

½ cup finely minced yellow onion

1 large garlic clove, finely minced

1 teaspoon curry powder

¾ cup chicken stock

¼ cup dry white wine

½ teaspoon Kosher salt

½ teaspoon black pepper

⅓ cup raisins

1 cup couscous

1 cup fresh pomegranate seeds


Instructions

In a large skillet, melt the butter over medium-high heat.  Add the butter and melt, stirring often.

Add the onion and garlic.  Saute, stirring constantly, until the onion is translucent – about 7 minutes.  Stir in the curry powder and saute until fragrant – about 1 minute.

Pour in the chicken stock, white wine, salt, pepper, and raisins. 

Bring to a full boil.

Remove from the heat.

Stir in the couscous.  Cover the pan and set aside for 10 minutes.

When all the liquid is absorbed, fluff the couscous with a fork and add the pomegranate seeds.

Taste for seasonings.

Serve either warm or room temperature.
