4 large Yukon Gold potatoes, skin on
2 tablespoons salted butter
1 small onion, finely minced or grated
2 large garlic cloves, finely minced
1 heaping tablespoon all-purpose flour
1 teaspoon Kosher salt
½ teaspoon white pepper
1 cup heavy cream
1 tablespoon freshly minced herb of choice (parsley, chives, dill, thyme)
1 cup freshly grated Parmesan cheese, divided
Spray a medium casserole dish with cooking spray.
With the medium slicing blade of a food processor, slice the potatoes into ⅛-inch slices.
Arrange the slices in the prepared baking dish. Set aside.
In a large saucepan over medium heat, melt the butter until foamy.
Add the onion and saute, stirring often, until translucent – about 7 minutes.
Dump in the garlic and cook for another minute.
