BANANA BREAD WAFFLES


Description

These Banana Bread Waffles are full of banana flavor and kissed with brown sugar and cinnamon.  Bonus:  they’re super easy to make and freeze beautifully.


Ingredients

Scale

1 ½ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon salt

¾ cup buttermilk

3 tablespoons brown sugar

1 teaspoon vanilla

1 teaspoon banana extract

2 large eggs

3 tablespoons melted butter

2 medium bananas, mashed (should be about ¾ cup)


Instructions

Preheat your waffle iron.

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

In a medium bowl, whisk together the buttermilk, brown sugar, vanilla and banana extracts, and melted butter.

Stir in the mashed bananas.

Gently fold the wet ingredients into the dry ingredients just until mixed.  Don’t overmix or your waffles will be tough.

Spray the waffle maker with cooking spray.  

Pour ¼ cup of the batter into the iron.

Cook for 4-6 minutes or until golden.

Serve with maple syrup, toasted pecans, sliced bananas, and whipped cream.
