Enmoladas (chicken mole enchiladas)

A great weeknight meal idea, especially for Cinco De Mayo, these simple enmoladas take easy shortcuts to get a tasty, authentic-tasting Mexican meal on the table in less than an hour.

Mole? On A Weeknight?

Yes! There’s nothing wrong with taking shortcuts, especially when you’re short on time. I don’t know many people who love enchiladas, but they can take a bit of time to make at home from scratch. Homemade mole takes hours to make and is a wonderful weekend project. Try our Mole Poblano recipe on a rainy Saturday. It’s a gratifying (and surprisingly easy) recipe to tackle.

This recipe takes a couple of shortcuts so you can have dinner on the table in about 45 minutes. I’ve also included a few more shortcuts to save even more time.

Ingredients Needed

  • Boneless, skinless chicken breasts – Shortcut: Use a rotisserie chicken instead of poaching your own chicken breasts.
  • Onion and garlic – You’ll only need onions if you use a rotisserie chicken.
  • Limes – not needed for a rotisserie chicken
  • Fresh parsley – not needed for a rotisserie chicken
  • Bay leaves – not needed for a rotisserie chicken
  • Dona Maria Mole Sauce Mix
  • Chicken stock and chicken base 
  • Corn tortillas
  • Sesame seeds
  • Mexican crema or sour cream
  • Queso Fresco or Feta cheese 

Steps To Make This Recipe

  1. Poach the chicken by bringing the poaching liquid and aromatics to a full rolling boil. 
  2. Add the chicken to the pot, cover, and bring the liquid back up to a boil.
  3. Remove the chicken from the heat and allow to poach (Don’t lift the lid!) for 30 minutes.
  4. Cool enough so that you can shred the meat. Wrap in foil, drizzle with some of the poaching liquid, and keep warm in the oven.
  5. Make the mole sauce by combining all of the mole ingredients and simmer until thickened.
  6. Assemble the enchiladas by spreading each tortilla with mole. Fill with chicken and roll up.
  7. Place the enchiladas onto a serving platter and spoon mole on top.
  8. Garnish with a drizzle of crema or sour cream and sprinkle with sesame seeds and onion rings.

Enmoladas (chicken mole enchiladas)

A great weeknight meal idea, especially for Cinco De Mayo, these simple enmoladas take easy shortcuts to get a tasty, authentic-tasting Mexican meal on the table in less than an hour.

For the chicken:

  • 2 boneless, skinless chicken breasts
  • 1 large yellow onion, peeled and quartered
  • 1 head garlic, unpeeled and cut in half, vertically
  • 2 limes, quartered
  • 2 bay leaves
  • Bunch of fresh parsley

For the quick mole sauce:

For the enchiladas:

  • 12 corn tortillas
  • Mole sauce
  • Shredded chicken
  • Toasted sesame seeds
  • Mexican crema or sour cream
  • Queso Fresco, crumbled
  • White onion, peeled, sliced, and broken into circles

Instructions

Poach the chicken.

Pick a pan where the chicken can lie in a single layer. Fill the pan with enough water so that the chicken will be submerged with at least 2-inches of water above it.

Add the onion, garlic, limes, bay leaves, and parsley.

Bring the water to a full rolling boil.

Nestle the chicken breasts in the pot in a single layer.

Cover the pan and bring the water back up to a full rolling boil.

Remove the pan from the heat and allow it to sit, with the lid on, for 30 minutes.

After 30 minutes, remove the chicken breasts.

When cool enough to handle, shred the chicken.

Wrap the chicken in foil. If desired, drizzle a bit of the poaching liquid over the chicken. Place in a 200-degree oven until you’re ready to assemble the enchiladas.

Make the sauce:

In a large saucepan over low heat, whisk together the mole sauce mix, chicken stock, and chicken base.

Simmer for 10-15 minutes or until the sauce has thickened.

Taste and adjust for seasoning.

Keep the sauce warm.

Assemble the enchiladas.

Wrap the tortillas in damp paper towels and microwave on high power for 1 minute until the tortillas are soft and pliable.

Place a tortilla on a flat surface.

Spoon some of the mole sauce onto the tortilla and use the spoon to spread it around.

Place ¼ cup of the shredded chicken on one side of the tortilla and roll it up.

Place the roll, seam side down, onto a serving plate.

Ladle additional hot mole over the enchiladas until they are completely covered.

Sprinkle with sesame seeds, a drizzle of Mexican crema, crumbled queso fresco, and onion rings.

Serve immediately.
