Pasta Carbonara

This pasta is rich, aromatic, and oh-so-flavorful. Each linguine is covered in a warm cheesy sauce and topped with delicious, crispy meat that complements the velvety richness. It’s great for parties or the ideal comfort food for days when you can’t decide what to cook.

To stir up this masterpiece, you’ll need a packet of linguine pasta, some meat (diced pancetta or bacon are great choices!), garlic cloves, eggs, grated parmesan cheese, freshly ground pepper, and salt.

Begin with filling a large pot with water. Sprinkle salt and add the pasta once it starts boiling. Cook, drain, and set aside.

Next, use a large deep skillet and cook the meat until it turns golden brown and crispy. Then add the chopped garlic for an aromatic kick. Once the meat is cooked and the garlic fragrance is perfectly infused, add the boiled pasta and toss it around the pan.

In a separate bowl, whisk together the eggs, black pepper, and parmesan cheese. While stirring continuously, add this mixture to the pasta and toss to combine.

Top it with a generous heap of grated parmesan cheese and freshly chopped coriander for garnishing. Not only is this recipe quick and easy, but you’ll probably find these simple ingredients lying around in your pantry too!Potato and green bean salad with freshly chopped dill.

Tangy Green Bean and Potato Salad

This tangy green bean and potato salad is packed with herbaceous flavor and is a healthy way to incorporate potatoes into your diet. This salad can be enjoyed as a hearty side dish or can be the sole star of the show too.

Start off with some potatoes and string green beans. For the vinaigrette, you’ll need a finely-minced sweet onion,  mayonnaise, mustard, minced garlic, fresh parsley, chopped fresh dill, vinegar, mustard, olive oil, salt, and pepper.

First, let’s start with the vinaigrette. Wisk all the above ingredients together until thoroughly combined and set aside.

Next, boil the potatoes in a large pot and remove once a knife can easily pierce through them without any resistance. In a separate pot, blanch the green beans until they’re a bright green color and still crisp on the outside, then set to boil.

Once both vegetables are cooked and cool enough to handle, slice the potatoes in half or quarters and place them in a large bowl. Then add the green beans and sweet onions. Pour the dressing over the vegetables and toss to combine. Cover tightly and chill before serving.
