Cream of Asparagus
Cream of asparagus soup recipe makes for a lovely and light appetizer to serve before dinner. There’s nothing like a warm soup to get your dinner started; a perfect starter for your Christmas meal. You’ll need onion, garlic, a little bit of flour to thicken the soup, white wine, chicken broth, heavy cream, and of course, asparagus. Sauté the aromatics and blend all ingredients together for a flawless creamy soup.
Italian Chestnut Soup
Italian chestnut soup recipe is super decadent, heavy and rich. It’s a great soup to try over the holidays with its rich nutty, and earthy flavor. For an Italian flavor, sauté pancetta until the fat renders, and mix butter into it. Remove the pancetta and store it on a paper towel for later use.
Sauté onions, garlic, celery and carrot until golden brown, and add them to chicken stock and white wine. Add bay leaf, thyme for some flavor and roast some chestnuts. Add heavy whipping cream and a little bit of nutmeg, and mix all ingredients together. Use some mascarpone cheese and parmesan to grate on top of the soup as a garnish, and voila! You have a perfect Italian chestnut soup.
Butternut Squash Soup
Full of earthy flavors, butternut squash soup is just a delight in the winter. It’s simple and easy to make, with minimal ingredients. Sauté onions, garlic, celery, bell pepper, potato, carrots, and squash in butter until translucent. Use frozen butternut squash cubes to make it easier on yourself. Pour the wine, chicken stock, salt, cinnamon, and sugar and simmer until tender. Blend until it’s a thick puree, and add some cream! Garnish and serve hot.
Cuban Black Bean Soup
Cuban black bean soup recipe is not only healthy, but it’s also super easy to make. The ingredients in this soup are naturally packed with so much flavor that you don’t have to work too hard for a delicious end product. It’s spicy, hearty, and best served with a delicious side salad. Sauté sliced bacon until the fat has been rendered, and add sweet onions, bell peppers, minced garlic. Mix with beer, bring to boil, and sprinkle some spices on top. You can replace the beer with white wine, chicken broth or stock, and you can add a cup of salsa, tomatoes, celery or shredded carrots for some added zing! Puree the soup in a blender, add beans, lime juice, cilantro. Top with a dollop of sour cream, cheddar cheese, avocados and some jalapenos for some extra flavor.
